I don't really relish the idea of using battery after battery in the thing so I was wondering what other methods are available?
Perhaps a AC adapter?
I will use batteries if I have to, it is cheap enough to build but I kinda want to explore all the options.

I don't see any reason why this wouldn't work, you even don't have to worry about connecting the leds wrong as long as you connect the leds the same way in serial circuit and in parallel circuit you can connect the leds any way you want and they will always emit.
The only thing what you have to be careful with is that you choose the right resistors.

I've been using this set up for almost 3 years. I don't recall the IR LEDs specifications which were purchased from Radio Shack, but I have a single 68-Ohm 1/2 watt 5% tolerance resistor in front of 3 LED set up.LEDs plug into a simple Radio Shack 6v 300mA AC adapter. Never need to worry about batteries, and cord is only mildly bothersome.

could I use a old cell phone charger?
I have a bunch of them and the one that I picked out of the pile is 5.5 volts, that seems like it would fit the bill.
sounds okay?

No problem, but those have DC output.
And you have to use a resistor with almost no resistance (in serial config) like 5-10 Ohms. Maybe 5.5V it is better to use parallel config, need 3 resistors, not sure how much Ohms.
