I've put together the following design, but I'd like to know how I could integrate a potentiometer into the system.  I know they are used to modify current flowing to lights in homes, but can they do DC?  Can they be limited to within a given resistance? What do I want to request at the local electronics shop so I don't come off too much the fool?

You forgot picture...

Why do you want potentiometer? Resistors do their job, they fits everywhere and are cheaper. Besides that you'll need resistor again for safe operation with potentiometer.
