I just grabbed Logitech's new Bluetooth 2.1+EDR adapter. I installed BlueSoleil 6 and then launched it. I told it to search and then I hit the Wiimote "sync" button.
Worked like a champ; 90+ FPS.
I also grabbed a tri-pod and hot-glued a nut to the WiiMote cover. The tri-pod screws into the nut with no problems and allows me to remove the tripod when I play the Wii. I could also pry the nut off and clean the cover if I ever wanted to sell the Wiimote.
I'm building a new head tracker right now. I should be able to post my results later. I plan on using it for Falcon 4 and FSX.

Few things:
BlueSoleil is, apparently, a shareware app. I'm going to try and get along without it.
Second, I have to hit the "sync" button on the Wiimote every time I wanted to play. Just pushing the buttons on top did not make the Wiimote sync with BlueSoleil.
Third, my measurements on the hat were all jacked up. The documentation probably tells you that you need at least a specific amount of distance between two points. I went to input my measurements in the software and it told me that I had built it wrong. Oh well.
