I have a Bicycle rear light with 5 leds. Do i just solder the outside 2 led off or do i have to bridge a wire across the outer 2 for the circuit to remain? (sorry i am not a sparky)

Well, it depends on how the circuit is connected, but in most lamps i've seen each LED is powered from a separate pin of a microcontroller, so you can just remove the LEDs you don't need without worrying about breaking the circuit.
Oh, and by the way, i hope you're not trying to make IR LED clip from this lamp - IR LEDs won't work when soldered in place of red LEDs (too little voltage).

You are spot on, i unsoldered the surplus 2 leds and it all works fine.
